Homemade noodles
The traditional Slovakian Sunday lunch is never complete without homemade noodles. We still remember watching our mom and grandma roll the dough and cut noodles very precisely. We have many fond memories from our childhood, as we were cooking and baking almost every day.
This basic recipe has many variations. We would eat homemade noodles with beef or chicken broth on Sunday and on Monday we would enjoy it with poppy seeds or friend egg.
Our recipe is from our Mum, who inspires us every day.
Ingredients
300g all-purpose flour
3 eggs - room temperature
½ tsp salt
1. Combine all of the ingredients together and knead by hand for about 5 minutes until all of the ingredients are combined.
2. Wrap the dough in plastic foil and put in the fridge for 30 minutes.
3. Roll out the dough on a floured work surface. Knead the dough constantly from above and below.
4. Roll the dough. Dough should be 3 mm thick.
5. Cut the dough into 4-5 cm wide strips.
6. Flour cut stripes and stack them on top of each other (2-3 pieces on top of each other, flour in between) and cut the noodles.
Boil the pasta in salted water. Cook for 3-4 min.
Beef broth
Ingredients
2-3 pieces of beef bone spike
4-5 carrots
A piece of kohlrabi or celery
1-2 stalk of celery
6-8 pieces of allspice
Salt and black pepper to taste
Directions
7. Cover all vegetables and meat with water, bring to a boil and cook for 2 ½ - 3 hours. The longer the broth is cooked, the more intense the taste will be.
