Aubergine mini pizzas

Perfect starter. You can prepare it ahead and just stick it into the oven when your guests arrive. Have it for a dinner – these mini pizzas are done in heartbeat. Use vegan cheese and you’ve got a perfect vegan meal.

Aubergines are filling and tasty and you can use them in many recipes.

Combination of flavours between aubergine, tomato sauce and mozzarella is just perfect. You can also decorate aubergine mini pizzas with basil, rosemary or a piece of a black olive. This is one of the recipes where you can get creative and use any kind of cheese or even veggies.

Ingredients

1 aubergine

Salt and pepper

Thyme – you can replace it with dried thyme

Olive oil

Any cheese – we used mozzarella, but you can use cheddar or gruyere.

Tomato sauce – preferably from cherry tomatoes or passata

Directions

1. Cut the aubergine.

2. Drizzle olive oil over aubergines.

3. Generously season with salt, pepper and thyme. Put into the oven for 15 mins on 180 degrees.

4. Prepare tomato sauce. Add salt and pepper if needed.

5. Spread little bit of tomato sauce on aubergines.  

6. Sprinkle some cheese over aubergines.  

7. Put into the oven for 3-5 mins – just enough so the cheese will melt.
